If you like Reuben Sandwiches you will love to pile this brisket high on rye bread with Swiss cheese, sauerkraut, and thousand island dressing, and it is delicious!!! You can also serve this smoked brisket with potatoes, carrots and cabbage if you're not a fan of the Reuben sandwiches and want more of a traditional Irish dinner.
Selecting the Perfect Corned Beef
These corned beef briskets are inexpensive to make because they are usually a three-to-four-pound briskets at around $3.99 a pound. And you can cook them in half the time than a large packer brisket. Buy a flat cut corned beef brisket, just like the one pictured below. Make sure you grab the flat they also sell these in a point as well; I pick these up from Kroger. The flat is the leaner cut and usually larger than the point. You have to cook these smaller briskets low and slow because they are a tougher cut of beef.

Ingredients for Smoked Corned Beef Brisket
1 Flat Cut corned beef brisket
Mustard as a binder
Garlic powder
Black pepper
Smoked paprika
Preparing the Brisket and Soaking
1. Attention: Rule number one, you have to soak your pre brined brisket in water for 24 hours, changing the water a few times in first few hours or else it will be way to salty. These come pre brined and would be very salty if you didn't soak in water. Set the included seasoning packet to the side, you will need it later.
Creating the Flavorful Spice Rub
2. After brisket is rinsed, pat dry with paper towel. I add a mustard binder. A binder helps your meat hold your dry rub. I apply garlic powder, black pepper, cracked black pepper liberally, smoked paprika. Then I apply the little packet that comes with the brisket. Which is typically a pickling spice blend of peppercorns, bay leaves, mustard seed and a few other spices.
How long to smoke a corned beef brisket?
3. Corned beef brisket is not a fast cook; it is low and slow. Place brisket on your grill with temp probes. I put mine on my Pit Boss 820 Competition Series. Smoke at 250 degrees. Smoke until internal temperature is 165 degrees.
4. Once you hit 165° wrap the brisket in foil and place back on your grill until internal temp reaches 200 degrees.
Resting and Slicing the Smoked Corned Beef Brisket
5. After hitting 200° keep wrapped in foil, wrap it in a towel, place in an empty cooler allowing it to rest for a minimum of 45 minutes. Do not skip the resting period, this allows all the juices to redistribute throughout the meat. If you need an amazing quality cooler.
