I smoked an entire 5-pound bologna chub on my pellet grill. This came out great and tasted like bologna I've never ate before. It was excellent and I will make again in the future. I made it a lot fancier today than I would have made it 20 years ago.


Selecting the Right Bologna Roll

I used a 5-pound bologna chub from Kentucky's Best brand. I paid $11.99 for the entire five-pound roll, everyone in the house had a sandwich and I have a ton left in the fridge.

Smoked Bologna Ingredients

1 bologna roll

Mustard as a binder

Your favorite dry rub

Your favorite BBQ sauce


Prep time: 15 minutes

Cook temp and time: 250° approx. 2.5 hours.

Preparing the Bologna Roll for Smoking

1. Remove the plastic wrap from your bologna roll. Then score the bologna, do this by running a knife down the roll making about a half inch cut, then score the other direction making a grid like pattern.


Seasoning the Bologna Roll

Apply mustard as a binder and place a coating covering the entire roll. This will allow your dry rubs to stick to your chub. Apply your favorite dry rub to the bologna roll. Today I used Meat Church Honey Hog and Holy VooDoo.


What wood should I use to smoke a Bologna Roll?

I would recommend hickory, cherry, or apple.


How Long Does It Take to Smoke Bologna?

2. Set your pellet grill temperature to 250°. I smoked mine on my Pit Boss 820 Competition Series


3. Put your seasoned and scored bologna roll on your pellet smoker for about 2 1/2 hours.

I rotated mine halfway through the cooking process.


4. Then after 2 1/2 hours apply your favorite BBQ sauce. I used Bachan's Japanese Barbecue Sauce.


5. Turn after 15 minutes and apply your BBQ sauce to the other side.


6. Once the smoked bologna reaches the desired temperature, carefully remove it from the pellet grill and transfer it to a cutting board. Allow the bologna to rest for a few minutes before slicing it into thick, juicy rounds.



Slicing and Serving the Smoked Bologna Roll


7. Cut into thick slices to your preference. I then fried my bologna slices in a skillet added some shredded smoked gouda cheese. I toasted a brioche bun and added 2 pieces of my smoked fried bologna with the melted gouda. I then added some small cut dill pickles to the top to give some crunch.
